Cowboy Bebop is an episodic anime with a very set structure. The team gets a bounty, the team hunts the bounty, the team moves on. Of course, if that was really all the show was about it would not be one of the most celebrated anime of all time. Each episode features character development from each person as they struggle to find meaning in their current lives. That's a poor summary on my part, so you should watch this longer video by Channel Criswell talking about the series' nuances and what they mean in a larger scope.
